What Is A Gallet

A galette is a free-form French pastry that can be made with sweet or savory ingredients. The word “galette” comes from the Old French word for flat cake.

This Savory Galette features spinach, feta, garlic, and cream cheese, all nestled in a flaky puff pastry crust. It’s the perfect easy appetizer or main course!

Ingredient Notes

Spinach: I used chopped fresh spinach for this recipe, but you could also use frozen. Just defrost it and squeeze out any liquid.

Feta: I love the salty flavor of feta cheese in this recipe, but you could also use goat cheese or Mexican cotija cheese.

Garlic: I used fresh garlic in this recipe, but you could also use garlic powder if it’s all you have on hand.

Cream Cheese: Use full-fat or reduced-fat cream cheese in this recipe. Alternatively, you can use mascarpone cheese in its place.

Puff Pastry: I often use my homemade puff pastry for this recipe, but you could also use store-bought.

Step By Step Instructions

Set oven to 425°F/218°C and if you have a pizza stone, place it in the oven while it preheats. A pizza stone will help with getting the bottom crisp, but don’t worry if you don’t have one.

Roll out dough on a piece of parchment to be 14″ round and 1/8 inch thick. You can also make it in a square or rectangle if you like.

To check if your mixture is ready, dip a spoon into it and then run your finger across the back of the spoon. The mixture is done if your finger leaves a clear path that doesn’t fill back in. If the path fills in, you need to cook it a bit longer.

Place the rolled dough on a baking tray lined with baking paper and set aside.

Add the softened cream cheese to a medium mixing bowl with the garlic.

Then add in the spinach, crumbled feta, salt, and pepper.

Mix to combine and spread the filling mixture over the rolled-out circle leaving 2 inches around the edge, and top the filling with grated parmesan cheese.

Fold the outer two inches of dough over the filling, overlapping dough every few inches, and gently pinch secure.

Brush the crust with the egg wash, and sprinkle with a bit of salt and pepper.

Place the pan on the pizza stone in the oven and bake for 25 to 35 minutes until the crust is golden.

Cool for 15 minutes before cutting and serving.

Erren’s Top Tips & Variations

  • Be sure to thaw the puff pastry before using it. I like to leave it out on the counter for 30 minutes or so.
  • If you’re short on time, you can make this Savory Galette ahead of time and reheat it when you’re ready to serve. Just be sure to wrap it tightly in foil so that the crust doesn’t get soggy.
  • If you’re using frozen spinach, be sure to thaw it and squeeze out the excess water before adding it to the filling.
  • To make cutting simple, use a knife to score the edges of the puff pastry crust before baking so that it’s easy to cut through after it’s baked.
  • This Savory Galette can be served warm or cold. If you’re serving it cold, let it cool completely before cutting into it.

Storage & Freezing Instructions

To Make Ahead: This Savory Galette can be made ahead of time and reheated when you’re ready to serve. Just wrap it tightly in foil so that the crust doesn’t get soggy. You can also make the filling ahead of time and assemble the galette just before baking.

Storing: Leftovers can be wrapped and stored in the fridge for up to 3 days. Reheat before serving.

Freezing: Freeze unbaked for up to three months. When you’re ready to bake it, simply thaw it overnight in the fridge and then bake it according to the instructions. You may need to add a few minutes to the baking time if it’s coming from the freezer.

  • Meanwhile, in another bowl, combine egg and water to make an egg wash and set it aside.

  • Spread the filling mixture over the rolled-out circle, leaving 2 inches around the edge, and top the filling with the grated parmesan.

  • Fold the outer two inches of dough over the filling, overlapping dough every few inches, and gently pinch secure.
