Mint Vanilla Iced Coffee with Mint Simpe Syrup

Mint Vanilla Iced Coffee is creamy, minty and very refreshing! A homemade simple syrup made with fresh mint is combined with vanilla cold brew coffee and milk then served over ice. This surprising flavor combo is the perfect way to cool off on a hot summer day! Serve with it my Italian Pasta Salad or this Grilled Peach and Haloumi Salad.

Iced coffee is the best thing to make halfway through the work day or whenever it’s too hot for anything else. Refreshing drinks like this Horchata Coffee and Iced Pumpkin Spice Latte (its so good even during the summer!) are repeat summer favorites. Or if you’re not a coffee person, switch things up and enjoy an Iced Matcha Latte instead!

Ingredients You’ll Need for Mint Vanilla Iced Coffee

  1. Mint – Fresh mint leaves will give your simple syrup a strong minty flavor. Use a very large bunch of mint plus save a few extra leaves for garnish!
  2. Sugar – Heated with an equal amount of water to create a simple syrup. I used white granulated sugar.
  3. Milk – Half-and-half, almond milk, oat milk or your milk of choice!
  4. Coffee – Grab your favorite cold brew coffee or make a pot of coffee then allow it to chill completely in the fridge.
  5. Vanilla – I used a vanilla flavored cold brew. If you are using regular cold brew or homemade, add in 1/2 teaspoon of vanilla extract, or vanilla bean paste or 1/2 of a vanilla bean pod with the seeds scraped.

How To Make Mint Vanilla Iced Coffee

  1. Dissolve the sugar. In a saucepan, combine the water and sugar. Stir until the sugar dissolves and the water starts to boil.
  2. Add the mint. Place the mint leaves in the syrup and stir to combine.
  3. Leave it to steep. Let the mint steep while the syrup cools then place in the fridge to store.
  4. Assemble the drinks. In a tall glass full of ice, add a couple tablespoons of syrup, followed by coffee and enough cream to your liking.

To make the Minty Simple Syrup:

  • 1. In a medium pot, set over medium heat, add the sugar and water. Stir until the sugar has dissolved, about 1 minute. Stir in the mint leaves and heat until the water is almost to a simmer. Turn the heat off and cover, allowing to steep for about 30 minutes. Strain the simple syrup, discarding the mint leaves. Add the simple syrup to a jar or squeeze bottle. 

To Assemble: 

  • 2. Fill two glasses with ice. Add about 2 tablespoons of simple syrup to each glass. This measurement can be eyeballed and more can be added later, if you like. Pour in the cold brew and then top with the cream or almond milk. Give it a good stir and taste. Adjust the simple syrup as desired. Garnish with mint leaves and serve immediately.
