These tiger nut flour pancakes are fluffy AND grain-free. We avoided making classic breakfast recipes for our toddler for a long time. Mainly because, in our situation, finding eggless, grain-free, or nut-free recipes was challenging. 

These gluten-free pancakes are packed with health benefits, making them a fantastic choice for both health-conscious eaters and those with dietary restrictions. Tiger nut flour, a super flour derived from the small, nutrient-rich tubers (Forbes) of the tiger nut plant, lends a naturally sweet and nutty flavor to the pancakes.

Making a non-traditional gluten-free pancake is frustrating. You find a recipe online, but you may need to tweak it for your allergy or diet. This tweak could set off a different reaction than what a recipe calls for simply because of a change in flour. Gluten-free pancakes usually take a bit longer to cook as well.

Parents, you know what it’s like when your baby sleeps, and you have to savor every minute you can before the childcare routine kicks in. Don’t get me wrong, we love our babies, but multi-task once they are active is challenging! Well, these tiger nut flour pancakes are just as good as regular all-purpose pancakes and cook just like it, too. Nothing beats having the whole table eat no matter the allergy.

Make those pancakes

Before we dive into the preparation of these tiger nut flour pancakes, we use our all-purpose tiger nut flour blend. This helps us achieve similar results as all-purpose flour without losing integrity. Let’s begin, shall we?

  1. Combine our tiger nut flour blend or all-purpose flour, baking powder, sugar, and salt in a standing mixer or large bowl until incorporated. Stir in the egg or egg replacer (as directed on the package), vanilla extract, and 3/4 cup of milk. Let the batter sit for 10 minutes if using an egg or 30 minutes with an egg replacer.
  2. Heat a greased griddle pan over medium heat.
  3. Pour 1/4 cup of batter per pancake onto the griddle. Cook for about a minute to two minutes on each side, flipping when bubbles form and edges crisp.

  4. Serve hot and enjoy!

Q&A

How can you tell the tiger nut flour pancakes are cooked through?

For pancakes on the griddle, wait for the batter to bubble up and burst, leaving a hole behind. When this happens, it’s ready to flip.  It takes us two minutes on each side.

Do I need to let the batter rest?

We recommend letting the batter rest for 10 minutes when using an egg. If you’re using an egg replacer, we suggest letting the batter rest for about 30 minutes to thicken and fluff.

Can I replace sugars?

We haven’t tried it with different kinds of sugar. We think the answer is it depends – you could replace the white sugar with brown sugar for example and you may be able to do this with coconut sugar as well. What does sugar do in the pancake process? It impacts the flavor, sweetness, and caramelization of the pancake so please keep that in mind when you experiment (Mashed).

Instructions 

  • In the standing mixer bowl or a large bowl, mix the tiger nut flour blend or all-purpose flour, baking powder, granulated sugar, and salt together until just incorporated.

  • Add the egg or egg replacer (per package instructions), vanilla extract, and 3/4 cup milk and stir until incorporated.

  • Allow the batter to rest for 10 minutes if you used an egg or 30 minutes if you used an egg replacer.

  • Grease a griddle pan and place it on medium heat on the stovetop.

  • Scoop about 1/4 cup for each pancake onto the griddle. Cook for up to two minutes on each side, flipping once you see bubbles burst on the top and see the edges of the pancake crisp up.

  • Serve and enjoy!
